Topic: Tasteing Tom's Complex Descriptions (4 msgs / 143 lines)
1) From: Gene Counts
Saw the posts by Terry, Pecan Jim and Bob today. What youngsters! Ha Ha. Wait'll they get 70 like me, talk about taste buds burned out.
I have been struggling this past year to taste even SOME of Tom's descriptions. My son is in Iraq and got on SW website back in Oct and ordered his old man 12 pounds of assorted goodies. I'm trying to do the roasts justice by being the best roaster I can be as I figure I owe him. I'd like to share my thoughts from noon today when I broke my six day rule and tasted two days early.
This is from the recent Kenya Nyeri Tambaya from Sweet Marias..... wanted to see what 93.5 cupping score beans tastes like:
Keep edging closer to nirvana the more I roast. This is fourth day this roast has been resting.
Have cup as processed in AP now as I write this. Bear in mind John, et al, have been suggesting drawing out first crack by cutting back to 450 etc. Other great subtle suggestions on refining roast. Just a tiny hint of oils on a few beans. Before I was getting too much oil apparently.
It works!
This is as close as I have ever come to Tom's descriptions,
"an elegant cup with pink grapefruit". Yes.
Jasmine light brown sugar sweetness. Yes.
Mandarin orange and warming spices. Maybe.
Apricot and Earl Grey tea like finish. Again maybe, buds aren't that good yet?
It is a fantastic cup and my spirits are soaring!
gene
ps: But what do I know, could be senility creeping in! Ha
