Topic: [OT] Snack idea (12 msgs / 317 lines)
1) From: Yakster
Hungry for some desert, I came up with a nice snack. Take some raw almonds,
freshly roasted to first crack in your Behmor and push them inside a nice
large red grape.
Crunchy and juicy at the same time. The Wife likes it too.
Almond roasts are neck and neck with coffee roasts these days. I roast 12
oz of almonds on a 1/4 # P1 B for 9:30, for just 8 oz, 1/4 # P1 A for 8:30
works out too.

I've found that almonds do very nice in my Gene Café too. 10 min =
at 350° and then cool. Yum

Have any good sources for almonds, besides the local grocery
(for me, it would be Trader Joe's)?

We have a Mennonite store near us that sells raw almonds in bulk. We can
arrange larger quantities with them for almost any bulk item. Might try a
co-op, organic, health food or bulk grocery, if you have one nearby.

I'm so jealous.
No, nothing like that here - Whole Foods took over in the Boston area. There
are a some
Mid Eastern stores in Watertown (one in particular) that sells an amazing
array of nuts,
but when I'm ready, I think I'd do better to order online (I'm not close to
Watertown, and
my car is unreliable).
Oh, to have a Mennonite store nearby... cool!

Have you check out nutsonline (dot) com? I have personally never ordered from them but have browsed their site when looking for cheap sources of Soybeans. They seem to have a good selection. A cursory glance suggested that their prices were pretty reasonable (more so than the local health food markets at least).

Lynne,
Our Costco (Denver metro area) has 3lb for $10 last week.
Hopefully something similar near you.

Yeah, I buy the 3 # sacks at Costco. We'd been buying them for a while and
eating them raw before I started roasting them, now we much prefer them
(freshly) roasted.
Funny thing about the almonds, they improve with rest just like coffee and
the full flavor development isn't there until the next day at least. Got me
thinking of resting versus staling, still thinking about it.
The Wife asked me about roasting walnuts, but it sounds too messy to me,
almonds have a good structural integrity. Might also have something to do
with my preference for almonds over walnuts, which leave me with a bitter
taste in my mouth.
Maybe I should try walnuts with salt, trick to kill the bitterness, but not
as healthy. I like that roasting almonds is not adding any oil or salt,
just heat in the Behmor.

Thanks for the input on roasting almonds on the Gene Cafe. I rarely see
information on the Gene Cafe on the list serve. I'm a rookie at roasting
and have enjoyed my experience thus far. Any other tips, suggestions would
be appreciated. Thanks Bob
