Topic: Anybody roasting coffee? (13 msgs / 546 lines)

Last six days roasted a bit of coffee, nothing spectacular not our busiest
week but not too shabby for our small operation. (ok six days out of seven
isn't a week but don't plan to roast tomorrow) Only 43 batches totaling
323lb of which 155lb our Flagship Delirium blend rest all kinds of SO's and
a couple other blends. Some greens from Tom (Shrubs) most from other
importers geared more for volume, even our little volume of a Ton every 5 or
6 weeks.
Maybe not exactly "home roasting" but oh well and the list has been deader
than a door nail lately. What happened to people talking about roasting
tweaks, techniques, profiles etc? You know, making beans "sing"! Did all the
serious geeked out on all things coffee coffee roasters move on! Ok, for
most part I have too.
Sad but the List just ain't what it used to be. Not even a good fight in
eons. Hey Ginny, put the gloves on and we'll liven this place up! :)

yeah not much of the classic discussions.
I'm not sure there's as much manual "time/bt/et,met" home roasting as
in the past. The Behmor has it's own language as do many other off the
shelf unmodified roasters.
I'm just about finished upgrading my monitoring with an Arduino based
systemhttp://code.google.com/p/tc4-shield/ 16x4 lcd display with
Time, BT rise/min, BT, ET, and voltage output of the variac. It can
graph on a pc with .csv data files.All for about the same cost as my
first pair of thermocouple units.
 The BT RoR graphs are like looking at a profile under a microscope.

I'm just roasting as needed anymore.  With all the kiddos and kids, I
need all the caffeine I can get.  And need something to do with the
3gal/day goat milk we're getting.
Roasting between a Java, Ethiopia DP and PNG.  Need another batch
tonight to keep things going and give it some rest.

This morning I drank DP Jimma-Nigusie Lemma using an Aeropress roasted to
City+ on a Behmor.
Just finished a couple LaPavoni espresso's made from Kenya Gaturiri roasted
to FC/FC+ also on a Behmor. =

Yea, I've noticed the quietness of the list lately.
My hunch is that there's a confluence of factors, but the bottom line is
that everybody is squeezed on all sides. I know I work much more than ever,
but earn no more than I did in 2006. I barely have time to roast, much less
pay meticulous attention to fine details.
 I dug some Bonko "Black Sun" DP out of the cryofreeze chamber.  My Quest M3
never disappoints. After 2.5 years, Bonko is still the "devil in a blue
dress" at C+. It may have lost a point or two. But a truly memorable 94 that
is now a 92 after 2.5 years, is better than a fresh 90 that is not a
memorable cup. Just sayin.
I do have one new brewing tip/trick. I've been using this lately for single
cup pour over brews: cut a large Chemex filter sheet into four quarters.
Fold like the big sheet was folded. Use the tiny filter for a single cup
pour over in a filter cone. It forces you to use maximal control in the pour
routine. The cup quality is excellent due to the premium quality of the
filter. My standard ratio is 15g/10oz. Also, you frugally get 400 filters
out of a box instead of 100.

Well as I reported a little over a week ago, I did my first blend from the Homeroast Competition.  The first roast just barely hit second crack and the second batch went into second crack for 15 or so seconds both the same annonymous blend of beans.  Had my neighbor come over to taste with me using the Giotto and a bottomless portafilter.  The shots took 35-55 seconds with the lighter roast.  Was good, but lacked something.  My burnt palate tried to distinguish things, but did feel a sense of fruityness was there.  The darker roast was next.  It took 45-75 seconds to pull.  Wow, what a difference, it had a great mouthfeel and could taste some caramel and chocolate undertones and then I thought I tasted some sort of berry (blackberry or such).  Both of us agreed the second batch was much better, really hammered home the difference a roast can make :-)
Well, that was in my cup this week....next week I'll be in San Anselmo, CA visiting ex wife and son.  Will have lots of time to waste during the school day and will get to enjoy crappy coffee oh well it's only 5 days....

Waiting for the Biftu Genema to get enough rest.  That stuff is *so*
lazy, but it's worth waiting for.  Making do with the tail ends of a
couple different beans as well as El Majahual, which also seems to want
a bit more rest.  Not exactly coffee doldrums, but... life goes on.

I'm roasting tonight; Kenya Kirinyaga AA Gakuyu-ini.  I used a slower ramp, 1st crack @ 15 mins.  2nd crack @ 19 mins.  Stopped the roast shortly in to 2nd crack.  Smells good!

Ahhhh.
I am enjoying my first proper cup of coffee since the tornado's hit
North Alabama.  We were very lucky to have had no injuries or property
damage but there heave been severe power grid damage that has impacted
the whole region.  We are still not running the HVAC systems and other
non essential systems. Today, power, water, and coffee came together
to remind me how much I love this drink.  Fast food, Starbucks, and
gas station coffee was so un fulfilling.  A nice Sumatra this
morning!!
