Topic: improving flavor from stove top espresso pot at sea (15 msgs / 550 lines)

I am away from home and staying at a place on the beach, our floor is less than 
ten feet above the ocean at low tide.  When we travel I use the stove top 
espresso pot to make our coffee.  When our vacation place is about a mile above 
sea level I think it tastes quite good but at sea level I find the flavor way 
off.  My theory is that it is because the brewing water is just too hot for a 
decent brew.  Anyway, yesterday I had the idea that adding a little alcohol to 
the brew water should lower the brewing temperature.  So this morning I added 
about half a bottle cap of my wife's brandy, St-Remy VSOP, to the brewing water 
in the espresso pot and while I could taste a slight hint of the brandy flavor, 
the general coffee flavor was much more like I get with my Andreja Espresso 
Machine that I have at home, elevation is about 315 feet,  and that I bought 
from Sweet Maria's a while back.  Another indicator of a better taste is that I 
drank my morning cup more than twice as fast as I had these last few days on the 
beach.
Anyway, I will brew my wife's cup the same way in about an hour and see if she 
likes it better also.

And not necessarily repeatable when not on holiday... ;)
I live at sea level (GPS may actually show under sea level). I wondered why
my mocha pot always tests better when I go camping inland, I thought it was
the surroundings.

OK, I just found this thread after roasting & brewing a pretty average cup.
Not horrible, but far from the great cup I was craving while shopping a
little while ago. Don't know if being at sea level changes the brew - while
I don't actually live *at* the sea any longer, I'm still at sea level & have
lived here all during my homeroasted life (short stay in AZ was before I
started homeroasting) - so I don't have anything for comparison.
But the thought of some brandy to perk my cup... mmm.. have a great rum
stashed away for holiday cooking... nah, too early in the day.
Then with Sandy's reminder of Sambuca (my ex-boyfriend & forever friend, may
he rest in peace, used to call that the "bottom of the barrel" for
annisette, btw - his Italian taste buds were extremely fussy, lol)...
So I had a great idea. Have some dried cranberries that have been soaking in
booze (rum? brandy? I forget) since Easter, at least... poured off some of
the liquid and - yum!!
I'm not retired - but I'm retirement age, so the heck with it being early in
the day!! I raise my cup to my fellow homeroasters for improving my cup
today - and improving the day, too. ;-)

It is the morning after and I am now drinking my second cup and I am more sure 
that the coffee is smoother and more pleasing to drink, quite close to what I 
get with my espresso machine at home.  Feel free to do what you want with the 
idea.  But note that at this point I am still just a statistical N of 1 and I am 
one of those who can taste things that most people can't. If I had two pots I 
would run a double blind taste test to just make sure but others need to try it 
to make sure.  It just occurred to me that it should work with a vacuum pot as 
well, but I don't think it could improve the flavor produced by a regular 
peculator.

Interesting, an elevation of 315 ft would equal a change of about 0.4 deg C for the bp of pure water.  Can the extraction really be that sensitive?  Maybe this explains why the perfect cup can be elusive.  
Have you considered differences in source water quality?  Dissolved salts and solids may be a factor to consider.  If you're using water from the tidal flow that could change the flavor.  Ha, 
I'm just envious you had a holiday at the beach!
Just for reference, it would take an elevation increase on the order of 1000 ft to lower the bp to 99 deg C.

I meant to suggest that where I live is not significantly different  
from sea level for these purposes.  Now if global warming raises the  
oceans some fifty feet or so that is another issue.  The main  
difference I found was when I was vacationing up in the Rockies were  
the place we were staying had an elevation of close to 6,000 feet.  I  
can't remember just what temperature water boils at up there but  
boiling food sure takes longer.  Boiled potatoes almost never get mash  
able.

Just a note on the specifics, we were on a week long vacation centered arou=
nd our granddaughter's sixth birthday.  We were almost six hundred miles aw=
ay from home renting a little beach side apartment for the week and we trav=
eled in the little Honda taking two 75 or so pound dogs as well as the stuf=
f we needed for the week.  I really tried the idea out with the limited thi=
ngs I had available.  I am not so much interested in adding flavors to the =
coffee but trying to eliminate or at least reduce the flavors I find over h=
eating produces.  My goal was to get the coffee made using the pressure fro=
m boiling alcohol so it would be done at a lower temperature.  I would pref=
er to not add flavors to the good coffee but rather to get the flavor from =
the stove top pot to be as close to what I get out of my espresso machine a=
s I can.  In general I have found three cups brewed with the stove top pot =
to really taste much more what I get out of the $1,200 or so espresso machi=
ne.  =
Anyway, I hope that makes sense.
