Topic: 7gr 5oz Cafe' Crema trial (2 msgs / 44 lines)

I just tried a 7gr 5oz pull for a truer Cafe' Crema. Used the same grind
setting I've been using for 14gr 5oz 25sec pulls. As described done in
Holland I used the double shot basket, weighed 7gr beans (used a Jewelers
Diamond scale I happen to have, accurate to 1/1000 of  a gram to make sure
of the amount.) Tried to tamp with the Reg Barber and hit the "ridge" on the
La Marzocco basket. So I pulled out the plastic tamper that came with Miss
Silvia, who ever said it's undersized is definitely right. What a piece of
junk. However undersized for a normal 14gr double basket tamp, slipped right
past the ridges so able to tamp a half basket. Pulled 5oz through 7g in
21sec. Very little crema. Tasted about like Vac. The 10oz Ristretto Cafe'
Crema Americanos I've been making (5oz 14gr 25sec pull plus 5oz hot water)
have more crema even after adding the hot water & taste creamer & fuller.
Same ratio of bean to water, same grind. Fascinating. Don't think I'll
bother dialing this one in, just stick to my 10oz Americano version - about
perfect size, when serving "coffee" we don't use that small a cup anyway!

Yeah, that sounds about right.  A 'cafe crema' here has just a very light layer of crema on top, and it's a very pale crema.  The coffee indeed is very similar to a vac pot cup.  Smooth and mellow, but I find it a bit richer.
