I am always bemused by the expert advice not to freeze or refrigerate coffee. Ostensibly, this is because coffee can absorb/adsorb odors and flavors as well as accumulate moisture; but if the beans are sealed, this is simply a non-issue. If I know I will not consume a coffee within a given week, I seal and freeze the surplus after is has rested the number of days at which I wish to hold. Amazing...all these years and I never knew it didn't work [grin]. Seriously, neither my refrigerated coffee nor my frozen coffee has ever acquired the taste of my celery or leftover chicken. Where do these people get these notions?...or is it they think people will be putting open containers of roasted coffee beans in the fridge? And then there is the question of freezing greens. Many folks on this list over time have amply demonstrated the efficacy of vacuum sealing and rather long-term storage of greens. The idea of cold coffee storage can easily be compared to bread, something = the general public is more familiar with preserving. ---------- It's best to just buy your bread once a week from a local bakery. If that's not an option it's better to buy from a local bakery what you nee= d to make the purchase worthwhile. Once you make the purchase leave out = the bread that you will use that week and freeze the rest. Refrigerating= will just cause the bread to dry out faster, doing little to preserve it. = Once you take the bread out of the freezer you never want to return it t= o the freezer so only take out what you will use quickly. The worst thing you can do is to just grab a loaf of pre-sliced off of a sh= elf in a grocery store and assume it's fresh and preservative free, using i= t up sometime before it starts to grow mold. If you're a DIY type of person you can just make your own bread, it's very = simple, very easy and not very time consuming.
