Topic: vacuum sealing new roasts (5 msgs / 152 lines)

How does vacuum sealing affect the degassing/resting period? I assume 
that CO2 will still be emitted under a vacuum, but I am not sure if this 
is true, or how it affects the process and taste.
I use a home vacuum sealer and something like this http://www.foodsaver.com/product.aspx?pid™03.What are people's thoughts on this?

miKe M. of this list has very extensive experience with this process. I
learned from him for the best storage of valve foil sealed roasted beans to
freeze in the old style freezer that does not go into defrost cycles.
This pretty much stops the degassing process with vented foil bags. I'm
sure the same is true of the vac seal and deep freeze of roasted beans. Do
some of your own taste testes after some measured time in deep freeze
storage to test this method.

In my limited experience, espresso/coffee (but it is more noticeable in 
espresso for me) seems to not develop the same taste when vacuumed, but 
when released from vacuum it seems to resume its process. I may be 
totally wrong :)
