Topic: 20# bad coffee-first time !! (18 msgs / 574 lines)

I always get Kenyans and Ethios from you, usually 20# bags . For many years 
 now . Just got 20# of Ethio BSC and all roasts are terrible ! For the 
first  time! Someone really dropped a clanger on this one.
I trust you have policy of replacement . Can we select the new coffee and  
pay any price difference ?

Not to mention personally I highly doubt it's actually bad coffee greens. In
over a decade not once have I received sub-par greens from Tom.
It's easy to turn beans brown, it's a lifetime Journey learning to make
beans sing.
More likely poor roasts, or dirty brewing equipment, or dull grinder burrs
or poor brewing technique or oh yeah possibly greens damaged somehow in
transit though never heard of it happening within the States. 
How about some roast specifics like tanning time (to 300f), time to first
crack and start of first temp, time from start of first to end of roast and
finish drop temp for example...

back to the market because you made a mistake?
You bought a food and you messed up. You eat it literally or figuratively,
but you can't take it back to the store.
Sweetmarias does not sell a bad coffee. If something didn't turn out like

On this list only rarely does someone talk about the merits or lack of
merits of a given coffee.  Some beans taste great, others not so good,
despite good roasting technique.  I miss that few people actually discuss
the coffees themselves.  I don't mean in general, I mean specific coffees.
That's why I follow this list.  Usually we hear about roasting and equipment
I agree that this is Tom's list and he sets the rules.  But, if we are to
discuss coffee, there will be some losers.  Believe me, if someone raves
about a particular bean, I'll probably go straight to Sweet Marias and read
about it.  So, I don't condemn anyone for saying he didn't like a coffee.
That's his opinion.  And, I like people giving their opinions.  The rule he
broke was "detrimental to the business" I assume. I've had bad beans that
I've bought in the past and didn't like.  Such is life.  But, I'll always
listen to people's opinions about the green beans.

I have a suggestion:
There used to be something on the list called Traditions where people gave
away coffe-related stuff they did not want or need. What if you split the
remaining beans (what about 15 lbs?) into three-five lots, asked for
interested people, tossed everyone's name in a hat, and gave away what you
don't like. You could even ask the lucky folks to pay shipping. Or ask them
to send you a half a pound roasted in return. Think of the goodwill and
exchane that could be built.

I will never, ever forget the time I first wrote to Tom, way, way back when
I first started roasting. Told him that the beans I got were great, except
for that one from Kenya. Tom so kindly wrote me back & explained to this
very green (pardon the pun) newbie that the beans from Kenya were a bit
more difficult to roast than others, and suggested I join the list for help
from other roasters.
I was ever so grateful for his kindness in response to my rash email - and
I found an awesome homeroast family that gave me so much help along the
way, on this great journey. :D
