Topic: My beans smell like breakfast cereal (11 msgs / 232 lines)

They smell like sugar smacks, to be exact.  Brazil Fazenda do Sertao Catui,
about 10 oz roasted yesterday in a Behmor. Set the roaster for 20 minutes,
opened the door to stretch 1st, cool just before 2nd.
I brewed a pot, the Chemex. No breakfast cereal tastes, not very exciting,
a pleasant cup but only rested a day. I wonder what it'll be like after
some rest?

again never drank it one day post roast. Let it set a while it is a good
honest cup of coffee. Sugar Smacks are for kids. The Brazil is for grown-ups

I still smell sugar snaps in the dry beans. The cup has gained more body
with just a day of rest, roastier flavors, and a touch of chocolate coming
in. Sugar snaps is now more evident in the taste that lingers after I have
swallowed a sip.

One of the forum regulars insists that he gets a nice peanut butter cup
from the do Sertao, though it seems to take just the right amount of
second crack (1 lb in a Behmor, straight P1 I believe) as well as
waiting until the seventh day to brew in his old vacpot...
I've found it to be somewhat more interesting than the average Brazil,
but no peanuts in my cup.  A lighter C+ roast did have these huge
hazlenuts around the third day after roasting, really pretty amazing,
and if I were really fond of hazlenut I'm sure I would have wanted to
get a bunch more of the greens.  :-/
