Hello,
There is much talk about stopping a roast before 2nd crack. I have a gene
roaster which has a cool button. If I press the cool button before 2nd
crack, I believe that the beans may still reach 2nd crack during the
process of cooling down. Is this roast considered then to have reached 2nd
crack? I prefer lighter roasts but not too light as then it becomes sour.

I also have a Gene Cafe.
What I do is:
1.  First, watch the beans and their color.  After you hit cool, they'll get
somewhat darker or more roasted even though new heat is not added.  If they
look "black" (waited too long), nothing else matters.  You've gone too far.
2.  Listen for first crack.  Sometimes it is subtle, other times noisy.
But, listen for its absence, i.e. 30 seconds from last "pop"
3.  Watch or more intense smoke coming at this point.  But, it can fake you
out.  Keep looking at the beans.
4.  Smell the smoke.  After first crack, it's more pungent to me.
Most important, always watch the color.  If it's getting really dark brown
and you haven't hit "cool", it's going to get darker.  So, think ahead of
the curve.

Yes, very well put, Phil!
Further more I find that taking a step back(not letting bean color get or
of sight) will dampen noise from motor, fan etc. more than the sound from
the crack(s).
