Thanks folks for being on this mailing list.
I bought some of the aged Java and was not impressed.
I had roasted to beginning of second crack and let it rest overnight.
Not very interesting.
Then I read the thread about letting it rest.
I've now had two batches that I let rest for at least 60 hrs before trying.
Each time I've been impressed with both the  smoothness and the roundness of 
its taste.  (don't ask me to define roundness, it just is)
Very good coffee,
It's nice to have good people to get advice from.
