I'd thought of the 'Kicked up Kona Teriyaki Steak Marinade' I make but for
an unknown number or people at different times decided on the Kalua Turkey.
What we had in Hawaii just melts in your mouth. It's a 'pulled' meat when
done. I know my culinary abilities well enough to be able to at the very
least come very close to duplicating it and make it my own style at the same
time. I'll toy with the flavor idea in my head of adding Kona espresso to
the day before brine soak. Sounds like a definite maybe! A very definite
probability. In fact it's a done deal. Just have to work out the brine
ingredient flavor adjustments accordingly. Thanks for reminding me of the
obvious...
