Keeping roasted beans as a "roast progression" indicator is OK for a period
of time.  Roasted beans tend to darken with age.  Ed Dunn of Dunn Brothers
used roasted beans of varying darkness when training new roasters.  After
five or six weeks the samples had to be replaced.

I think in a post Tom wrote a year ago, the only accurate way to use the
tiles is to grind the beans, place them in a petri (you know a lab dish- but
I can't figure out how to spell it!) dish and compare them under a certain
light.  I can't get into the archives ot I'd try to find it.
