You know, Les, I've tried smoking fish several times, but I've had two ma=

Actually it was the Panama La Berlina, Lubos. As to why I'm roasting esp=
resso
darkly, well, I had a *really* sour experience with some Yemen Mokha Hira=
zi
lately. I roasted it just to the beginning of full-city, and it came out=
incredibly sour as espresso. Now I'm starting with a dark roast and if t=
hat's
ok, lightening up a little.
I've got to admit, I've been neglecting my espresso lately in favor of Ch=
emex
and press-pot coffee. I need to work on my skills with Miss Livia.

I've been trying out both those coffees the last couple of days. I found the La Berlina wonderfully rich roasted well into second crack for drip and french press, but much nicer just barely into second crack for espresso. While the Y.M. Raimy has a strong ferment taste that mellows at a darker roast and is nice that way for both drip and espresso, I loved the Y.M. Hirazi roasted a little lighter (crema bomb!) in espresso., blended with the la Berlina. If you find the Hirazi sour you really had better watch out for the Raimi.
