I suspect my approach is a bit too simple, but my taste buds may be
too unsophisticated to notice, too:  If it's hot enough outside for
the AC to be on, I just put a few loaf pans on top of the floor vents
and let them get good and cold.  (If it's not that hot outside, I put
the pans outside instead.)  Then I put a single layer (or two) of
beans in the pans while another batch is roasting in the HWI. When a
new batch comes out, the previous batch is quite cool, so I chuck 'em
in the vac canister...

I don't have any bean cooling problems because I use a HIP, but my brother
roasts outdoors with a Poppery, and he cools by dumping the beans in a loaf
pan and then floating them in the swimming pool!
