Charlie,
  Remember way back when they caught the beer companies using detergent in
the bear to get the picture of the foam working its way down the side of the
glass in TV commercials?  I think these same guys are now making espresso
ads.  I haven't seen anything produce that thick red syrup like creme; not
any of my machines or any of the hundred or so commercial shops I've left my
money in. :O)
   
   I must have taken a cranky pill - seems like I was pretty defensive for a
couple of days. Must be the side effect of this last birthday.

Steve,
What kind of beans are you using to get RED creme from a BROWN bean? I get a
full head of creme on my shots - even on a full cup - but it is never red. I
used to pull shots with a Krupps, then a La Pavoni and now the Solis Master
and I use 25 different beans and I've never pulled a red creme.
I know about the narrowing field of choices in the commercial world. Down
here on the border I've narrowed it to zero. I've got a couple of coffee
crawls coming up and I'm hoping to find at least ONE god-shot. The closest I
ve come is from a perfectly roasted La Meil. The ISH is great but not as a
shot.

  OK - we're being semantic I guess.  I checked the brochure and that's what
I call "rust" and I get lots of that color creme.  
   I don't know if its a symptom of CSA, but way back before the earth
cooled I worked in Seattle for Tally (printers and paper tape readers and
perfs) and I had an engineering tech who brought in his own beans and made
his own coffee. He drew my name for the Christmas exchange and he gave me an
antique coffee mill that was almost exactly like the Zass I have now.  He
then started bringing me great beans (he always got promoted :O)  and turned
me onto real coffee.  I don't know what happened to Richard but I've thanked
him a million times mentally.  So if your cubical smells better than
Starbucks - maybe you're unconsciously making converts.  So keep it up!!
