Topic: kc espresso, a new SM customer and red crema (was (45 lines)

I know most of the *$ managers and one of them told me the best straight
espresso was on Wornall N of 75th st - Bar Stephanos.  I tried it and the
barrista was not a regular, but I caught him backflushing the machine - a
very good sign!  There were some grounds in the espresso but the taste was
the best I've had and the crema wouldn't quit.  He was telling me that their
blend is best with milk drinks, and it is (considering this and the crema,
it probably has some robusta).  Broadway cafe has great latte art, but Bar
Stephanos can't be beat.  They get their coffee 2 days post roast and use it
a maximum of 5 days.  They get delivery twice per week.
The barrista was very interested in the fact that an air popper could be
used to roast coffee and that he could get the world's best green shipped to
his home.  He expects to be online soon and I gave him Tom's URL.  He's very
excited.  Welcome him when he shows up here, everybody!   ;)
Now about that crema - red crema isn't fire engine red, it's a reddish
brown, and sometimes a brown with reddish flecks.  The crema above was
reddish at first, and it persisted after sipping, adding sugar, stirring,
adding milk
and finishing the cup.  Sorta like permacrema.  I'll go back and try it when
a regular barista is there.
