Ed,
Some very good points, and I agree with you,
especially how lighting affects the color of foods,
etc. While eyes can compensate to a certain degree
there are simply limits to what the eyes can do under
a variety of conditions such as.
Do you have a recommendation as to which light works
best for the types of comparisions trying to be made? 
I know that the halogen type lights used in track
lighting systems are very close to the spectrum of
sunlight - would they be viable?
I'm currently checking my roasts using a halogen bulb
in a MagLite as someone else on the list has stated
they do. Since I too roast in the evening that gives
me a good bright light to check the progress of the
roast under, although I do notice a difference in
using the MagLite in the garage and then observing the
bean color under the flourescents, even though they
are spectrum corrected.

I use a MagLite also to view my roasts, but I'm sort of a MagLite fan.
I think any full spectrum light source (excluding fluorescent, which is a
pseudo 'full spectrum' source) would be a good choice.  I 'think' halogen is
a good choice, since it is such a 'white' light, but I'm not sure.  I've got
studio lights that render colors accurately using professional film balanced
for 5200K color temperature (like the sun).  Inexpensive screw in bulbs
similar to these can be purchased at camera shops and screwed into a regular
'shoplight' fixture.  They might also be a good choice.
