This is a multi-part message in MIME format.
Thanks to all of you for your help.  I bought a switch and wire for =
under $3 at Home Depot and now have no problem running up to 450*.  The =
beans heat faster and I notice that more of the chaff is removed.  I =
like being able to turn off the switch (the smaller heating element is =
still on), but watch the thermometer immediately start dropping.  The =
beans cooled fast enough that I felt safe letting my 7 year-old transfer =
the beans from bowl to bowl to complete the cooling process.  I can't =
wait to try the beans tomorrow.  
I am also curious to try some Vietnamese beans that were given to me.  =
The first batch tasted burnt and took 18 minutes to get slightly beyond =
first crack.  I now know that I baked the beans rather than roasted =
them.  So I have a bunch of free beans to experiment with and document =
my results.
