Well, here are the results of a way too long wait!
Zip Lock Bag! Forget it! I took Alchemist John's advice and didn't even
cup it! It didn't have any aroma from the dry bag!

Flavor 5
Body 3
Finish 3
Cupper correction (2) plus 50 equals 72
Vacuum sealed with O2/CO2
Dry Aroma 3 (Spicy)
Wet Aroma 3
Brightness 7
Flavor 3
Body 1(very thin)
Finish 3
Cupper correction (-2) plus 50 equals 65
Fresh Roasted with 24 hr rest (Not roasted by Mike, but by me.)
Dry Aroma 4 (Very Mellow and Earthy)
Wet Aroma 7
Brightness 8
Flavor 7
Body 3
Finish 7
Cupper correction (2) plus 50 equals 82.5
Note: I added the two "Aroma" categories up and divided by two. Tom has no
fear of storage replacing fresh roasted coffee any time soon! I found it
very interesting that the O2 packet seems to take too much out of the
coffee. It was very thin! I wouldn't have guessed they were the same
coffee by the smell both wet and dry. The O2 had a very spiced smell to it
almost peppery. The plain vac sealed coffee had a much mellower smell, yet
the flavors said they were the same coffee when sampled thorough the temp
range. The O2 had little taste or depth at the higher temps. The regular
vac sealed held flavor throughout the temp change. Nothing came close to
the fresh roasted, and I must say, I matched Mike's color very well, so even
though I roasted in a Poppery not a Rosto, I think I was very close! This
was a blind test! I found the same results when we tested the JBM at
Mike's! As I didn't know which cup was which, I feel very confident in
saying that the O2/CO2 takes something out of the coffee and makes it worse
rather than better. This was my experience in two tests with two different
beans at two different times.

Roasting and looking forward to some Kona Americanos in the AM!

Good job Les, your results on the Song Bird where very similar to mine. =
I to noted that the Co2packet took away from the flavor, and left it =
flat. Good job, and Thanks to Mike again for his efforts and time.
