OK, y'all convinced me to give Timor another try. I roasted a half cup
batch on Tuesday, Oct. 29, rested it for *three* days, and brewed a cup via
FP on Friday afternoon. Wow, waaaaay different than my first try. Very
nice chocolate flavor, and nice richness. Also, didn't seem to upset my
stomach the way lots of regular coffees do, so maybe it's something to do
with the acidity (rather than the caffeine) of Central American Coffees.
I also roasted this batch a little darker, about 10 secs into second
crack. They look kind of city/full city, but it's hard for me to be sure,
since I roast mostly darker decaf beans. Anyway, I consider this a highly
successful experiment. Thanks for the tips, folks.
Also, I plan to try the half-caf ghimbi/timor blend, Les, as soon as I
roast some more ghimbi.
