Hi Rick, (I'm answering on list too since it may be of interest to others.)
First glad you like the Blue Sky and find it interesting you vastly prefer
it to the Kona Mountain. The Blue Sky to me has great Kona acidity but is
somewhat weak in body, complexity and finish. It's more a 'slap you in the
face' kind of Kona. On the other hand, the Kona Mountain is a more balanced
'classic' Kona. Very good acidity with good body, complexity and great
finish. Interestingly the Koa Kona (current cupping winner) probably has the
least acidity up front, especially hot, but stunning overall complexity and
finish. The acidity comes through with both the KM & Koa more as they cool.
Hawaiian coffee grade wise, specifically Kona, here's the link again.http://www.kona-coffee-council.com/cstandards.htm#1436Basically to be called Kona it first must come from the Districts of North &
South Kona. Seems basic but there is other coffee grown on the Big Island
too. Kona has a unique set of growing conditions. Outside this small belt
it's not the same.
All grades greens are supposed to be between 12.5 & 9% moisture by weight.
Extra Fancy is min. size 19 AND maximum 8 imperfections per 300 grams. (can
be larger beans.)
Fancy is min. size 18 and max 12 imperfects per 300gr.(often has XF size but
the higher defect count.)
No. 1 min. size 16 and max 18 imperfects per 300gr. (again often larger
beans in it with higher defect count.)
Select (a grade I've seldom seen) is a different grading. Max 5% by weight
defective beans with max 2% by weight sour, stinker, black or moldy beans.
Can be assigned size classification.
Prime (I do see this sold, but stay away from it.) Max 15% by weight
defective beans with max 5% by weight sour, stinker, black or moldy beans.
Can be assigned size classification.
No. 3 (really stay away from this!) Max 35% by weight defective beans with
max 5% by weight sour, stinker, black or moldy beans. Use of the word "Kona"
is prohibited.
OG - Offgrade is not a grade within the meaning of these standards but is a
descriptive term applicable to green coffee which has a market value and
designates a quality lower than Hawaii No. 3 green coffee. Use of the word
"Kona" is prohibited.
Kona Peaberry (type II) also has grades but I've never seen it grade
labeled.
