G'day all- I ran across this on another list I am on. 
I found their results on optimum infusion time to be
curious unless they are speaking of getting the
absolute most from the coffee grounds regardless of
whether or not it tastes good.  Its from the Univ of
Akron. There is an interesting list of what we get

Hey, there is phenol in that list.  At least I have a chance of finding a 
taste correlation now.
It is really amazing just how many of those compounds I recognize (and 
under non-coffee circumstances, would never put in my body)
