No kidding! I've been roasting in the cold with a box and some aluminum foil 
to provide varying levels of recirculation. Which provides some opportunity 
for profiling, which I've discovered can humble a home roaster double quick! 
Thought I had some idea of what I was doing, thought the Old Toraja was just 
too musty for me, unless it was roasted into burnt bean flavor territory...
Then I wasn't paying attention one day, thought I'd messed up this one 
batch, oh well.
Took it to work to use in my one cup dripper, and had the best cup it's ever 
produced! Took it back home, and pulled a shot just to make sure, still 
smooth, smoky, cinnamon...
I'm still trying to figure out exactly where I went right, I've almost got 
it...
I need to start taking notes!
