Even though i love my Moka Pot and really believe my Brikka System Bialetti
Moka Pot (Kaliffa) makes better coffee (espresso??) than most of what is
being passed off as espresso at coffee shops, etc. I think that today it is
difficult to define MOKA POT COFFEE as Espresso.
While espresso was once produced using water under steampressure, according
to today's definitions that is not enough. The newer technologies invented
in the mid 20th centuries allowed the extraction of "oils" that never were
extracted under steampressure.
I am waiting to receive results that Bialetti has from tests run on the
"crema" of their Brikka system-so that I might be able to remove one of the
? marks after the word "espresso" above.
