Topic: Shelf life of green beans (21 msgs / 368 lines)

Hi new lurker here.  I have been trying to get the
straight skinny on storing green beans.  I have found
through research on the web that green beans can be
stored for one year or longer, what I haven't been
able to find out is how long decaf beans can be
stored.  Can someone enlighten me?

store decaffeinated greens) and certainly vacuum sealing should extend =
the life, even decaf greens.

I have stored my green beans in un-capped glass jars.  I understand that
green beans only suffer if they are not kept dry.  I have some which have
been stored for more than a year and find no problem with them when roasted.
Based on my experience, green beans can be stored almost indefinitely.  I
would like to hear other's experiences.

I believe vacuum sealed greens will stay fresh much long than that. Coming
up on year 2 of storage testing Costa Rican LaMinita soon... year one were
still like fresh.

Ask MiKe MkKona about the monsooned SH beans I sent him and that will pretty 
well give you an idea of what happens. Those were stored in the SM cotton bag 
in my coffee cupboard, air conditioning and all. They just kind-of gradually 
turn funky over time. Smell like an old cotton bag.

Fortunately we had no monsoon that affected the beans. I don't know about 
storing in tin, but I store most of my beans now in vacuum sealed FoodSaver 
bags. That's only because I seem to keep buying faster than I am drinking.
Give the tins a try and let us know in a year or so :)

When you roast the beans and the coffee is not good any more, then the coffee

Just being CSA - I have some pretty good decaf that I bought from Tom. My
sister (lives in the same park) has a real problem with caffeine, so I keep
it stored in small vac packs for her.

 Stored in their parchment coffee beans keep for years almost
like new. Stored green they "keep" well for a year if they don't
get wet , sit on cement, freeze, or come in contact with
something smelly but they slowly lose color and richness of
flavor. I think some caffiene is slowly lost, too. I have some 2
year old beans that are still good, but are more delicate to
roast and weaker in the cup than when new. Compared to fresh,
picked just a month ago and just milled beans they really seem
meek and humble.     (vac sealing might make a big differance?)

My reason and thinking for vacuum sealing greens is exactly to emulate the
protection provided by the parchment encasement. Keeps them from drying out
and protected from environmental smells etc. Seems to be working well so
far... Of course if you don't have a ridiculously large stash it may not be
an issue:-) Then again, when you find a green that's really great it's nice
to be able to stock up and keep an exceptional green around.

how about storing them in tins?
and how would we really know the age of the beans-unless we get them
from an honest broker like Tom and Maria  who monitor
freshness............

to get old and dry. The only 'lift' was their flavor being lifted right

Or get them at the farm like Charlie does with Mexican or I've done with
Kona:-) As you gain experience (as I gain experience) you get so you can
tell from the smell of greens if they're fresh new crop or been sitting
around. That's one of the telling factors in my vac' stored greens. When I
cut open a bag of year or more old vac'd greens they still have that fresh
greens smell and retain their green color. Others I've sent greens to have
commented the same thing. (except for already aged or monsooned greens of
course like Monsooned Malabar or Java Old Brown - still have some in my
stash:-)
Now believe it or not at a little after midnight I'm off to roast a batch.
Got a couple pounds of a new Kona I'm just dying to try!
