I found out something interesting yesterday.  I know that you can use a
variac to control the temperature on popcorn poppers and the Fresh Roast
because they are really nothing more than funny shaped hair-dryers: no
brain.  I also know that you can't variac a HIP because it has a brain and
is temperature regulated.  Vary up and down and the temperature stays the
same.
I assumed that the Caffe Rosto was brainless because I've heard all of
Mike's exploits.  But as I was looking for one to buy last night (there's
not a single one in stock on the whole Internet), I read that the Caffe
Rosto is temp-controlled.  Now I'm *really* confused.  Can anybody enlighten
me?  Maybe I *could* variac my HIP.
After my Alpenrost gets here (TOMORROW!) so I'll have a backup, maybe I'll
try it.
