Well, after a lot of reading, especially on this site, I decided to buy the 
SM5K for Christmas.  Now that I have it, I need some tips from the more 
experienced users.  What roast works best for a cafe crema?  What grinder 
setting do you use for the cafe crema? I'll be playing with it over the next 
few days, but if you can tell me your favorite settings, tips, etc., I can 
get right down to enjoying the brew. Thanks.

 When John gets back to Texas you'll get a very experianced
opinion. I've only had mine since July. There's been over 70 lbs
of beans brewed through it already, though-the drip machine and
press pot are mainly gathering dust since then. We like a full
city roast best for cremas. A little lighter is fine, but much
darker seems too thin and bitter.  A blend of lighter and darker
roasts is also nice.I use a grinder setting of 4 for a 4 oz
crema, the wife grinds at 8 for a 7 oz shot. Too tight a grinder
setting, less than 3 can clog the machine, and , unlike John,
I've never pulled a 2oz shot that took more than about 8
seconds, even at the finest grind. Not for true espresso short
shots. A 3 oz shot makes a fine americano, though, with some hot
water added. Come summer you're going to love the ease of making
a thermos of iced coffee-push the button about 8 times to make 8
 3 oz shots and pour it all into a thermos of ice cubes. You
might want to call Baratza and ask how to adjust the doser to
hold more grinds. I forget now how I did it, and there's a trick
to it, not in the manual.  My son never leaves for school
without two 4oz cremas and a few oz of hot water in his thermal
mug, it's a nice, rich eye opener. Think I'll make myself one
right now, come to think of it. They're always great, you can't
screw it up.
