Coffee-Caramel Sauce
use on plain cakes,ice creams,parfaits.........
3/4 cup brown sugar-firmly packed
1 cup white sugar
2/3 cup light corn syrup(Caro)
1/4 cup butter or margarine
few grains of salt
1/3 cup table-18%-cream
1/2 teaspoon vanilla
1/2 cup strong coffee
Combine first 5 ingredients in saucepan.Cook,stirring until sugar
dissolves.
Cook without stirring to 236 F or softball stage.
Cool slightly.Stir in cream ,vanilla ,and coffee.Mix well.
Makes about 2 cups.
Keeps well for a week at most..........
you likely won't have it around that long!!!
