I. We both use a Foodsaver vacuum sealer. My experience is they stay new
crop fresh much longer vacuum sealed...

miKe (Kona miKe that is) is absolutely correct about vacuum sealing my green 
coffee in FoodSaver bags. I had some 18 month or so old ISH that I had 
carefully stored in the cotton bags I bought them in. It really got funky 
over that period of time. I sent most of what I had left to miKe for him to 
try and his wife, Debi, accurately described the flavor as monsooned ISH. 
Terrible thing to let happen to perfectly good ISH. 
The FoodSaver sealing seems to do wonders for storing green coffee for longer 
periods of time.

and then you should transfer it to cloth/burlap bags.
First, if you do transfer to cloth, then you have to begin making sure that
air can get to it and that you rotate your bags, top to bottom and such.
You can't just stack them up in a cupboard and hope for the best.
Secondly, a vacuum-sealed FoodSaver bag is not "a plastic bag."  The air
(and moisture) have been removed and the bag is considerably much more of a
barrier than a Ziploc bag.
