I saw a really long one awhile back at GI Joe's I believe. Over a foot long
probe as I recall. It was too long for Caffe' Rosto application so I didn't
pay too much attention. Was with the Turkey Deep Fryers to be used with
same...

Go to McMaster-Carr.  They have all sorts of bi-metal dial thermometers with the right temp range and diff. stem lengths.  I bought a 8", 2" dial, 500F thermometer for $28.  It's a beautiful unit.
