Would the SS tube protect well enough to inside the drum, head deep in 
rotating beans.  That is my original thought.  Or are the probes to 
delicate for that kind of abuse?

That's what I would do . . . although at some point (extension) the drag of the 
beans will bend (crimp) the tubing (unless you use something heavier than the 
1/8 "hobby shop" tube).

I don't know how long an unprotected bead thermocouple would last being 
battered by tumbling beans  . . . but I wouldn't expect long.  Mechanical 
(and chemical) protection of the thermocouple is the primary function of a 
thermowell (isolating the process environment from the "real world" is the rest 
of it (and becomes "primary" if the process environment is nasty enough)).
