Kathleen,
If you know a better way (Nitrogen, Argon, Helium, CO2) to replace the
oxygen with please tell me. I'd be interested. However, I have a question.
Initially, I wonder how much CO2 is generated in the time it takes to draw a
vacuum from freshly roasted beans. Ample CO2 is produced afterwards, but the
jar lid can release the CO2 (dependening how much coffee is in the jar) but
I doubt any oxygen seeps in.
