Topic: question about drum roasting experience (4 msgs / 121 lines)
1) From: jim gundlach
I have a BBQ drum but I don't use it much because I roast over wood
fires and the Androck over the fire popcorn poppers give me extra
control over heat. With my arrangement of the drum roaster, the only
way I can control heat is to control the amount of fire. With gas that
is quite easy but with wood it is not. With the Androcks I can move
the beans closer or further away as I see fit to adjust the heat. All
I have to do with the fire is make sure there is enough to meet the
roasting needs and if I want to reduce heat all I have to do is move
away from the fire a bit.

OC is the man-he has roasted literally tons of beans over wood fires in a
drum. It maybe one of those deals where it is OJT and lots of time and
burnt/baked beans. I am amazed at how long it takes to get the drum up to
roasting temps in this frigid place.

The only roasting I do over wood fires here is with a fireplace
popper like Jim Gundlatch, and like he said, you can move the
popper as needed to prevent burning. In Mexico, roasting over
wood fires on a comal you add or remove pieces of firewood as
needed. Because the clay plate doesn't hold heat like metal the
roasting temp resonse is fairly quick. My brick oven is
preheated with a wood fire but when I roast it's the steady heat
from hot firebricks beaming into the roasting chamber.
It sounds like you need an insulation blanket of some kind for
your grill ,in winter. When the temp is high enough for roasting
remove it. I'd suggest a good rockwool bat with aluminum foil
covering if you can get that kind of thing there.
Charlie, wondering "what's OJT?"
