Why does the temperature inside a roast beef go up when the oven is at a
constant 350? You are measuring the air temperature inside the roasting
vessel, not the temperature inside the bean. The darkening of the roast
is an indication of the continuing caramelization of the sucrose, and
presumably other chemical changes in response to heat.  In any case,
baked or not, what do your tastebuds tell you?  The proof of the method
is in the taste, not the thermometer!
