Anyone know of a good source for large canning jars (half-gallon or
larger) with screw-on vacuum-tight lids? (yes they would be used for
storing coffee).

They can be purchased at a chain of farm supply stores called BLain's or a
whole range of names, Fleet and Farm. Doubt if you will find them inside
metro SD-but could find one in a smaller surrounding community. There are
some type of high performance plastic containers that would work but they
have big prices. These are the high performance plastics like Lexan - HDPE
(high density polyethylene) does not make a good storage container-not air
tight and has too many tiny recesses/holes to retain stuff and it will go
stale/rancid and cause odors.

Any restaurant supply store would probably have them. I've got several glass
gallon canning jars I bought at a restaurant supply back when I had my
coffeehouse. The ones with the wire bail and gasket are called 'French
canning jars' if that helps.

I can tell you that half-gallon mason jars exist, but I don't know where to
get any right now. During canning season (last half of summer) Ace Hardware
carries them.
