Topic: (Re)Discovering City Roasts (21 lines)

I realized a couple days ago that nearly all my roasts are now full city
roasts, either just short of second crack or into second crack.  Rarely do I
go to full rolling crack.  Part of this came about by reading about people's
roasting profiles, nearly all of which run to full city roast, or full city
+.  But also, I was not stopping roasts after first crack or well before
second crack, the city roast.  I just did that on one of my favorite
Americano coffees, the Guatemalan Huehuetenango.  I can still recognize it
as the same coffee, but just barely, as the bright, floral flavors now come
through strongly.  After only one cup, I can't yet determine if I like it
better, but it is like a whole different coffee.
If you are like me and have forgotten the city roasts, rediscovering it
greatly added to my variety of coffee tastes without buying more coffee
varieties.
