I always use my HWP in the fireplace. I just make sure to push a couple of sheets of newspaper up the flue and let them burn up before I start roasting. Creates a nice updraft if I keep the glass doors closed once the roaster starts. The fan never changes speed except to cool. Pretty consistent temperature would be my gues. I can hear the cracks through the doors. I make allowances for the colour of the beans as they appear darker than they really are. Interesting point - my HWP takes between 9 and 12 minutes to make a decent dark roast with visible oil. -- "Success always occurs in private, and failure in full view."
