Topic: My CRCS evaluation (5 msgs / 130 lines)

Well, I've been putting the CRCS through its paces all week.
First, I tried a city roast.  The coffee was full of flavors, but all of 
the flavors were tinged with a sour note (mainly citrus flavors, so my 
tastebuds were coming up with sour grapefruit).  The first cup was OK, 
but it was hard to drink more enjoyably.  I tested this roast on some 
friends, and they were amazed at the flavors, but didn't like the coffee.
Next, I tried a dark roast (somewhere around Vienna).  The coffee was 
OK, but mainly just tasted roasted.  There was a hint of nuttiness, but 
mainly just roasted flavors.
Right now I am trying a full city roast (roasted right to the verge of 
second crack).  I really, really like it.  The sourness is gone, but 
there are subtle flavors floating around my mouth as I type.  Very 
little body or aftertaste, but very smooth, subtle citrus flavors are 
there.  This is a nice cup.

Peter,
  I found that a full 3 day rest of the roast produced a very excellent cup.
I tried it on just a  day rest and got the same citrus notes.  The 3 day
rested produced an excellent cup.

I didn't notice citrus on the first day, but day 2 and three produced a very
obvious lemon rind aftertaste.  Not a bad coffee, and blended with an aged
Sumatra it was very good.
