I have a bunn that is very old and falling apart, but it still works and
makes great coffee... even better since I went out and bought a gold filter.
I like the instant hot water for my green tea in the afternoon so I'm
content to leave mine plugged in. I guess if power consumption is an issue
you could add insulation around the water tank. I actually use that heat to
benefit during colder months to help my kefir (A fermented milk similar to
yogurt) making.
If you leave the bunn unplugged for too long you may want to flush some
fresh water through it. This will depend on how good your water is in the
first place and usually is not a big issue. I use an under sink RO filter.
At the least you may  need to top it off to make up for any evaporation.
