I just wanted to say I will be off line for about a week or so starting 
tomorrow.  If anything is directed my way, I am not snubbing you, I'm just 
gone.  Off to Florida for Mother's day.  Should be back on-line the 18th.

Terry,
John doesn't really like ISH!  Last time I was at his place, we had light
roasted Aged Sumatra!  If you will notice, Tom recommends a very dark roast!
The light roast really brings out the uniqueness.  A great cup of coffee,
but much more on the rough side than a smooth ISH.

Okay Les, now I need to decide if you are pulling my leg or if this is the
real thing. I have two Konas roasted and I think I have some aged Sumatra I
could roast. Maybe I'll do that and let them choose from those. I could
always offer to send the ISH since it wouldn't have time to properly rest
anyway.

Isle of St. Helena - in the opinion of many (most?) its the best bean
going.   But then I like Kona, Corsta Rican, Puerto Rican, Jamaican  :0)

Terry,
I am not pulling your leg!  Alchemist John's Aged Sumatra was ramp roasted
so light that it looked like there were at least 6 different colors to the
beans due to the variation in the aging.  I would say that it was very much
a light city roast!  John thinks the ISH is O.K.!  He is an easy guy to
please, and I sure am glad that he lives here and not in Florida.  We are
having a lot of fun together homeroasting, and I have enjoyed watching him
build his roaster, and sharing ideas about roasting!  If you get to meet
him, you will really enjoy the experience!  Besides, if you have not
experienced a fresh goat milk Cappuccino, you are missing something
important in your coffee life!

Les,   John does sound like the kind of neighbor *most* of us would like to
have. The aged Sumatra I thought I had turned out to be an Aged Yemen Mokha
Mattari Tom had in very limited supply a while back. That might be an
appropriate beverage.
