" I'm blending two similar roasts of that Sumatran together.
Then using that blend to make a Mocha Java mix along with some
Harar Horse carefully roasted to just pre-second crack, and some
Pluma just starting second. It wasn't working untill I added the
Sumatra done to the extra 10 degrees. When I get a finer mesh
sleeve made for my roasting basket I'll replace the Harar with
Yemen Mohka. Alchemist John helped me fine tune the Harar roast
at the gathering (thanks John) "
Two days after my Kenneth Davids book arrived I realized how close the
Harrar region was to Yemen. And I already knew all those Indonesian
Islands were close together. So I tried the same thing!
My result wasn't a MochaJava by any stretch, but it was still very well
balanced. Enough so figured out how to roast smaller batches of Harrar
in my Alp. I've been using 5oz of Harrar to every 8oz of Sumatra and
have been tweaking the roast of each to see how the flavor changes. I
haven't had a bad batch yet, but I'm amazed at how the flavors change
with different degrees of roast.
Damn, I just tell you guys how much fun this stuff is...
