Ed, Jim Schulman, uses a FR and has tried with much 
success this method. Here it is as well as I can remember.
when 1st crack gets going a bit. turn the roaster 
off and let it coast on its own internal heat thru 1st crack I beleive it will 
be about 1 min. then turn it back on and bring it to the 1st crackle of 2nd. 
again turn the roaster off and let it coast to the desired finish. I have tried 
this method and find it works quite well. give it a try. and good 
luck
