Les just raved about the Nicaragua C of E Coop 22 de Sept. Allow me to
say I am just as pleased with the Nicaragua Matagalpa-Pacamara
19+screen. This is a big bean and I roasted about a pound and a half
well into the second crack in the wok Monday evening. It was quite
good Tuesday morning and late Tuesday afternoon it was better. This
morning I would rate it among the best five or six I have tried. I'm
looking at putting together an all Nicaraguan order.

Jim,
You must have missed my rave about the Pacamara! It was so good I suspended
my ban on adding to the stash and bought 5 pounds of Pacmara. I have moved
it into my top 10.

Les,
It was probably noticing your rave that led me to put it on my
order list for the last order. That was during the funding crisis and
I was more skimming the list than actually reading or taking the time
to participate. I have always found that I like the coffees you say
you like.

I really like this coffee a lot - better than the Maragogype although
both are a little tricky to roast. I back off on the batch size a
little, although I doubt this is a issue with the Gundlach method ...
its mostly a problem with air roasters where the air flow can't
agitate these big, heavy seeds. Pacamara is one the the cultivars
that really has a particular taste, not often true in coffee as it is
in wine. That makes it sort of unique too.
BTW people get mad at me for running out of these really limited
coffees, so this is a warning that both the Auction Lot Nicaragua and
the Pacamara are moderately low in stock!
