I just roasted 250 grams of Huehuetenango that was NOT typical. First the beans looked smaller than I am accustomed to seeing. Then as it roasted it smelled totally different than I'm accustomed and having finished, it finished a lot darker than I'm accustomed. I allowed four hours for out gassing and then pulled a shot and WOW this is great stuff - but NOT Huehuetenango. I have 5# of what ever it is an plan on keeping it - just would really love to know what I've got because I'd order it again in a New York Minute ( that would be a heart beat to you West coast folks).
