Topic: HAPPY THANKSGIVING (35 msgs / 909 lines)
1) From: Myron Joshua
John's post reconnects me with the memories, not only of the kitchen aromas
and wonderful family meal-but with the common feelings and ideals we share
and that i always felt on Thanksgiving.
Coffee is a drink of brotherhood. Enjoy that marvelous after dinner cup. I
can picture the Royal Balance perched on Mike's Thanksgiving table now.
Best wishes, myron

2) From: Barbara Greenspon
Happy Thanksgiving to all, though we, for the last few years, have
celebrated in full on the Friday after (tomorrow) so as to allow our two
kids and their families to celebrate with "the other sides" on Thursday,
and we get EVERYONE for the whole day on Friday. Works great. Today is
a day where we celebrate ourselves.
This is much to be grateful for, and among that much is coffee in its
entirety and this list and what it represents.
I am truly grateful.
Best to all,
Barbara

3) From: Wandering John
Living in this great country of ours, there is so much to be thankful
for on a daily basis. On Thanksgiving Day it is really a bit humbling
realizing just how much I have to be thankful for this year. I
personally am thankful for an incredible set of friends on this list.
I am thankful for the thousands in our country's uniform that stand
between us and harm and for the spirit of freedom that drives them.
I'm also thankful that I'm wearing an elastic woven belt. I have
sampled about 20 great dishes and have violated almost all the rules
for my personal diet. Pumpkin soup that was to kill for, a cranberry
ring that could stand up against any I've ever seen and especially
eaten. Although I didn't eat any of the bird - there was smoked,
roasted and baked; there was brisket of beef and spiral cut honey
hams.
I was thankful to see so many of my friends enjoying the meal and the
laughter that was constant in the room. I'm taking a break before
the progressive desert reaches our home where we will give them a
choice of TEXAS pecan pie, apple strudel or chocolate mousse along
with Kona, Costa Rican, Panama, Puerto Rican Yucco or Ishmali for
coffee.
Its a great day! I hope it was a happy and fulfilling day for you all!
John - counting my blessings and my friends

4) From: Brent - SC/TO Roasting
Happy Thanksgiving to everyone. I hope you're all doing well.
I'm back in the roasting saddle again with an iRoast 2 from our host. Have
roasted a couple of batches and, so far, am very happy with it.
I also added a Technivorm KBT to my coffee artillery and am extremely happy
with it.
Best wishes to everyone.

So Brent,
Are you the speedy guy that beat me to the sale page? After years of no
drip coffee, I am strongly considering a Technivorm.

Les,

It must have been someone else that beat you to the Technivorm. I =
ordered
mine last week and picked it up from Sweet Maria's on Monday. Didn't =
even
know they were having a sale!

The Technivorm, so far, has been great. Prior to it, I used a Cuisinart
Brewcentral for 7 or 8 years, but the brew cycle seemed to be cooling =
down
and some small, hard to replace parts were failing.

Technivorm's KBT model drips into a thermal carafe. You could probably =
drip
straight into a mug or travel cup, too. Would just need to rig it so =
the
brew switch was in contact. The carafe is not built into the machine, =
but
it does press up against a button that turns on the brewing.

Check out Tom's info, too. It has a switch in the brew basket to turn =
off
the drip so grounds can bloom, then you can switch it to slowly fill the
carafe or to fill it at full speed. Also, you can rotate the grounds =
basket
to get full wetting.

The machine is not as big as it looks in the pictures. Overall, it's
probably has same or a bit smaller footprint than the Brewcentral. The
Technivorm doesn't have a timer for brewing, but I bought a heavy-duty,
grounded lamp timer. Have it set to start brewing just before the alarm
goes off. That set up is working well.

It comes with everything you need, including a few white paper filters. =
The
Swissgold cone filter fits it perfectly and works very well.

The Technivorm is one of the few things that after just a few days, I =
feel
like it was definitely worth the money. I'd tried out a couple of other
machines from Cuisinart before settling on the TV and definitely know it =
was
the right decision.

And I just finished chopping these d@#&* things by hand. No food processor
(broke awhile ago - takes up to much space anyway). Battle between the
cranberries rolling on the floor, and trying to get at them before Emma (my
border collie with the endless appetite) got them. I think it was a tie.
Curious - (too late for me right now) - why roast cranberries?

Sounds delicious! I just put my cranberry nut bread in the oven, hoping I
haven't messed it up. This was always a tradition of my mom - she passed
away ten years ago, but it was just before the holidays, so I never baked it
until now. Will see...
Roasted two Brazils this morning: Brazill Cerrado DP Fazenda Aurea & Brazil
Joao de Campos WP Decaf. I like to drink half decaf to cut down on my
caffeine, as I end up too wired. Didn't have any coffee at all for a couple
of days - no time to roast, plus the landlord complained to me to last time,
so I was waiting for a time when they might not be around. Couldn't hold out
anymore.
Drank a cup right away, some more later. Delish!! Very happy, will like to
see how it is after a rest.
Have a great Thanksgiving!

I usually take the water from boiling, and reduce it down a bunch, then add a ton of sugar and make a syrup to pour on pancakes.

I like to make two kinds of sauce--one raw relish with walnuts, oranges, a touch of Amaretto and sugar; and one cooked, in equal parts OJ and water, plus sugar, cinnamon and orange zest. For texture I add some dried cranberries to both. But I never thought to save and reduce the cooking liquid--usually, it gets resorbed by the berries as they cool. When my father-in-law moved in with us two years ago, he insisted we also serve canned jellied sauce--it was his family tradition to chill and then unmold it carefully from the can so that the ridges were preserved. He passed away three weeks ago tomorrow, so we will also serve that in his memory.

Ahh, as they cool. No, I smash the berries while they're hot through a china cap strainer.
The jellied bits of the cranberries ooze through, the skins and most of the seeds are left behind and discarded.
And the syrup turned out just awesome. From three bags of cranberries (minus two cups removed for cranberry nut bread), enough water to almost float the berries, strained out after the berries pop; I added two cups of sugar and boiled it a bit more; it didn't really need to be boiled down much.

Not moved in yet. Coffee stuff is aboard ship.Won't be here until Dec
9 or so.The picture of the Butler's Pantry is my coffee prep station.
Thinking of selling my Brewtus and buying a Duetto. A sink is being
installed in the granite top.The cabinet under the sink has a pop up
shelf which holds 70 lbs and will house one of my grinders. Coffee
room is covered porch next to hot tub and looking out at pool. Life is
good.

SE Happy Valley about 9 miles South of Portland. Hopefully I will be
able to offer my house for the next PNWG. Love the coffee here much
better than Hawaii and SM ships here.Only thing I miss from Hawaii is
Zippys chilli. Zara if you want pics I can send you some through
Shutterfly off list.
