I pulled some straight double shots from the PNG Organic today!  What a
great single origin espresso!  I took it 5 sec. into second crack and gave
it a 48 hour rest.  The wife loved her Cappuccino too!  Finished off dinner
with a nice Americano from the same bean.  Anyone else have a new favorite
single origin espresso?

Not new, but I'm currently drinking a very buttery Yauco Selecto as a 
single-origin espresso. Seems to need more than a 48 hour rest, 
though. Four days is more like it, and that's with 5'10" from 
initiation of first crack to dump 15" into second in the Hottop.
