Interesting article, but it's missing one of the biggest points. Cost of rent, facilities, equipment, and labor outweigh the cost of coffee (coffee shop owners, correct me here if I'm wrong). Therefor, pricing is much more about how to extract the most $ from the Customer visit, rather than worrying about how much coffee is used. I was surprised to read in the article that an espresso drink could have the same number of shots in both medium and large. Sounds to me like those would be too different drinks, with the large being much more watered (milked?) down.
