Hi folks - The discussion about paying for coffee by weight has me wondering how consistent my brew is to others. I've been using a scale for the last few months to accurately and consistently(?) maintain a cofee:water brew ratio each morning in my press pot and vac pot. I had been doing something like 1.5 ounces of coffee to 32 ounces of water. A coffee roaster I spoke with last week suggested I use 2 ounces to 32 ounces of water. At 1.5 ounces of water, I thought the coffee had a much stronger flavor than what I was used to, in a good way. Yes it's a factor of personal taste and yes things like grind and extraction make a difference. That raises a good question, if folks are using a scoop, presumably you're scooping ground coffee and certainly measuring by volume, not by mass. Am I just a knucklehead to assume that in these tiny dimensions, mass and volume will be pretty close? Here's another stupid question, then. I brew in a moka pot. I use about 1.75 cups (14 ounces, according to google) of water in the moka pot, but some water stays in the bottom, so I think that about 12 ounces actually ends up in my cup. I use 24 grams of coffee, ground quite finely. I used to use 26+ grams of coffee, but I roast 1/2 pound per week, and at 26+ grams per day my half a pound of coffee wasn't quite making it through the week. Somewhere on Tom's site he recommends 7.25 grams to 4 oz of water. I rounded it up to 22 g to 12 oz. I have played with it a bit going over and under and for us this seems to be the right ratio. Although with the RIP I've added a few grams. Do all of you actually weigh your coffee every time? I use a SCAA scoop and use 7 scoops for 8 cups of water. Is this too little? I didn't find any difference between using 7 scoops or 8 scoops. So why not save on the coffee? John H.

55 grams coffee to 1 liter water is SCAA's. Seems I'm on the strong side.... I weigh out 65 grams coffee to 700 ml water (2.29 ounces to 23.66 fl oz) using a Cona Jr, grinding @ #1 on a Mazzer (factory marked @ #9). I use the measure that came with my Melitta pour through. I use 10 level scoops (~65 gms of Kona beans) with 7 cups (8 oz ea) of water. I never weigh the coffee - except for this time. I'm inclined to do a Steinway right now, but I'm almost asleep as it is. A couple of sips and I'd be out of it, so wait til morning. I thought the coffee/ water ratio was expressed as grams of coffee per oz H2O. For the 16oz Steinway, I grind 25g of coffee beans and brew for 3 - 4 minutes. I usually weigh the coffee before grinding. The morning pot-o-Joe is typically "9 Cups" as measured on the side of the brewer which is about 50 oz water and about 61 gr of beans. which is about 3/4 cup measure of unground beans. I do weigh the beans for each pot of coffee. It doesn't take much time and it aids consistency. For drip coffee, I was doing 7 grams coffee to 4 oz water (my coffee maker is marked in 4 oz "cups"), then I read on-line a recommendation of 1.5 grams per oz of water, so I switched to 6 grams per 4 oz "cup". I have not noticed a significant difference in taste, so I'm sticking with the lower amount. Interesting discussion, thanks. How much does the coffee in a SCAA scoop weigh? And do you measure before or after grinding? Since I'm a novice, I looked up Tom's ratio for cupping and use that - 7.25 g per 150ml (5oz) water. I just compared same coffee (Brazil Cerrado roasted 5 days ago), same grind and same proportions in French Press and small Mr Coffee. The SCAA standard is 7.25 grams for every four ounces of water. Coffee is a solid, not a liquid, so it is important to use a measurement that is meant for solids like grams. I use this as a bench marck and then explore from there based on my own personal taste. My scale lives on the counter right by my coffee, grinder etc. I weigh each time because it's convenien, accurate, and consistent. When I'm on the road I have make do by measuring volume of beans. Scale is in a drawer right by the electric kettle, grinder, and then stove. Every day it comes out, measures my coffee, then goes away. I use the top of my grinder hopper inverted to hold the beans. Easier for me to remember mass than volume. Is that odd? I have a handy little Salter scale, 8-oz max, that is lightweight and easy to store and handle. I keep my scale handy in a drawer near my counter and it is very easy for me to weigh 24 grams of coffee beans before grinding. I use the same moka pot every day, use the same amount of water and coffee, so the process has fallen into a fixed routine. I don't think it would be easier or significantly quicker for me to measure in any way other than weighing. The blue scoop is equal to 1/8 cup or 2 tablespoons, if I recall correctly. I have mislaid my SCAA Blue Scoop and use a 1/8 cup measure instead right now. My 1/8 cup measure typically weighs out between 9 and 11 grams per scoop depending on the coffee, the roast level and how "level" you get it. I don't level it as such, just scoop it and shake off the mounded unground coffee. There is a little mounding left when I do so. The same scoop filled with GREEN coffee is about 20 grams. I don't weigh my beans, but I use 5 standard SCAA scoops of beans per 40 oz pot in the Newco OCS (10 "listed" cups, 5 actual Amurican-style cups). Sometimes depending on the particular bean or blend I'm doing I'll up it to 6 scoops, mainly if it's light in the body department. In the AP I use 2 AP scoops (I think that's 4 SCAA scoops) to make one cup so it's quite a bit more "expensive" in the coffee department, but the quality is superb. -- Gary F. I measure pregrind volume... 5 SCAA scoops of beans go in the grinder for my "10 cups" (is that 4 oz or 5 oz per cup?) of coffee. I've checked it multiple times and 1 scoop of beans into the grinder = 1 scoop of grounds out of the grinder (or close enough to not really matter much). I do *not* pregrind my coffee except if I am taking some in to work, gifting it or travelling. -- Gary F. In order to get 7 scoops of ground coffee it takes 6 scoops of full beans on my Virtuoso with the grind set to 29. So yes I measure by ground coffee. Knowing how much full beans it takes to get the right amount of ground beans only took me a couple of tries. I only grind right before brewing. I never let my ground coffee sit more 1 or 2 minutes. I use 6.5 to 7 SCAA scoops (total 42g to 45g) per 30oz water for Bodum presspot. Brew for 4 minutes then place whatever doesn't go immediately into a cup into a 24oz thermal flask. I also use about 2 of the AP scoops for my cup of coffee. I don't really measure, since the top of the black connector on my Super Jolly is about that amount. It ends up being a lot of coffee, but with the AP and a polyester filter I haven't had a better cup outside of espresso. 1.8 grams beans per 1.0 oz water. (yields 24 cups per pound) I used to measure by scale until I discovered a better method: my hand. A "fist-full-o'-beans" turns out to be 18 grams every time. [You'll need to weigh your fist-full] I use a briki that holds 10oz of water, so no guesswork there. I usually make AP, FP, or Drip (manual) from this 10oz of water and my "fist-full" that I grind each time. When I do other brew methods or quantities, I keep close to the ratio, except MokaPot , which is pretty much determined by the pot (and 'Nam press, also fixed somewhat). Ivan, have had a buddy around a fair amount this summer. He's got a bachelor's in organic chem. I figured that my anal-retentive desire for measurements would be right up his alley. wrong. He measures out coffee for his FP with his hand (not accurately like you), and steeps the coffee however long feels right. Sometimes he gets absorbed in a paper article...whoops! Oftentimes, his taste response is, "oh, this is overextracted and bitter" ha ha ha. He tells me that in most of his chem labs, they were happy to get back 50% of what they put in.
