| I am about to begin preparing the coffee for a party next week that will have 112 people. Not all, of course will be coffee drinkers and some will just continue to drink wine and beer. I already got some helpf from the list--many thanks!--on how much coffee will be needed. I figured I will roast up about 7 pounds and if I begin to work on it this evening even with my little i=roast, using 1/2 cup per roast, I should finish in a week (I work at home and can do the roasting while I work, leaving a good amount of time for cool down of the i=roast between each use. Now my thoughts have turned to preparing the coffee. Here is what the place where the party will be offers in terms of equipment 10 coffee carafes 3 large coffee makers approx. 100 cups, 85 cups, 65 cups. 1 large hot water maker 4 small coffee makers (I could bring two small coffee makers in addition, my Scandinavian and an old Norelco 10 I just acquired) 2 small hot water makers All of the equipment in the kitchen seemed pretty new to me when I quickly walked through., but I did not get to look at the coffee equipment and I assume that the small coffee makers are pretty generic. I am assuming that the large ones will do a better job. But I am not sure how they work. I assume like a percolator-- you pack the metal filter with coffee and let the water perc through. Do you need any kind of filter? And what kind of grind dos the machine take? I will probably be using my maestro Classic to do the grinding and will hrobably have to do it a day in advance. For the party I was given some Salvadoran beans. I was told that they are some kind of bourbon and good quality. It is hard for me to judge because I do not care too much for Salvadoran beans; they always seem to have some bitterness that I do not get with any other Latin American bean that I have roasted (mostly Central Americans). To the extent that I can judge this coffee seems quite good. I am looking for recommendations on the kind of roast, but figure FC would be good for such a large group; I figure that would be a neutral roast for this coffee. Any opinions on all of this? It wasn't the best, but we did get compliments on the coffee so I guess it was OK. I mention this because I was worried there would not be near enough and we were fine. I'd guess if there was more light and the dinner hadn't been 90 minutes late we might have run out. | On Sun. & Mon. I will be providing 2.5 lbs. of beans (the last of my Brazil Poco Fundo and Colombia Excelso), which I roasted today (as well as a 42-ouncer of Costco Seattle Mt. Blend I bought fresh from their roaster in case my homeroast runs out) for the "green room" at the Fox Valley Folk Festival. I'll be lending them my Starbucks whirly-blade grinder too. (Would have lent them the Bodum Antigua, but they're going to be brewing it in one of those giant party urns). Hope it lasts long enough for me to get a cup or two. I hope they'll do it reasonable justice, as I have other work to do at the festival that'll keep me from running in & out brewing pot after pot.
